Dining Options for Every Beacon

Bushnell University offers two welcoming on-campus dining spaces designed to fit every student’s day. The Burke-Griffeth Bistro provides full meal service in a community-focused setting, while the Beacon Beanery offers a casual space for coffee, snacks, and connection between classes. Together, they create convenient and inviting places to eat, study, and gather on campus.

Burke-Griffeth Bistro

Located at the west end of Burke-Griffeth Hall, the Bistro is where the Bushnell community comes together over inspired American and international fare. Think comfort food with a twist, global flavors, and that one dish you’ll crave all semester.

Beacon Beanery

The Beacon Beanery offers a convenient, welcoming space for students to grab early morning coffee, enjoy fresh baked goods, or pick up snacks between classes. It also serves as a comfortable spot to study and connect with others.

Students can also shop Bushnell apparel and merchandise to show their Beacon pride.

Who’s Behind the Food?

Burke-Griffeth Bistro is managed by Ala Carte Foodservice Co, a local Eugene company with 30+ years of experience. Their chefs are committed to high-quality, popular menu choices that students actually want to eat.

Translation: This isn’t mystery meat cafeteria food.

Students living on campus have a certain number of meals, depending on housing.

  • Wednesday 8:00 AM – 10:00 PM
  • Thursday 8:00 AM – 10:00 PM
  • Friday 8:00 AM – 6:30 PM
  • Saturday CLOSED
  • Sunday 7:00 PM – 10:00 PM
